Domestic Helper Recipe: Cool Noodles-n-Peanut Sauce

Everyone loves this dish. Aaaaand it’s quick to cook, cheap and tasty…exactly what we’re looking for.
This dish of cold noodles with peanut sauce has a splash of vinegar, soy sauce and some cucumbers. The combination is proven and pleasing. We eat it regularly.
These recipes should be adjusted to the taste of the people eating. I always change recipes slightly…especially the garlic or fish sauce(replacing salt). Also, you should always be tasting any recipe as you are cooking.
PEANUT SAUCE ON COOL SAVORY NOODLES RECIPE:
INGREDIENTS: 2-4 servings of spaghetti noodles,
1/2 or more cup water for thinning the peanut butter
peanut butter(around 5 big tablespoons or so; I prefer to use the no-sugar type,,,it tastes better)
1 tablespoon small dried shrimp(soak in warm water for 5 minutes then chop finely)
2 tablespoons chopped green onions (you’ll need more for putting on top of the dish)
2 cloves garlic, finely chopped
(optional) chili sauce or fresh chili(chop the fresh chili finely)
(optional) 1.5 tablespoons carrot finely diced
1 full teaspoon brown sugar
1-1.5 tablespoons fresh lemon juice(see our ‘Lemon and Lime Tips’ article)
2 tablespoons oil
1 tablespoon light soy sauce (plus 1 more tablespoon to splash on noodles)
1.5 tablespoons fish sauce
black pepper for topping
1-2 tablespoons rice vinegar (to splash on noodles)
1/2 to 1 cucumber for topping(cut into “toothpick” shapes..long and thin)
COOKING: 1) saute(fry) together in the oil, first, the shrimp then the green onions and garlic(don’t ever let garlic burn), then the carrots(optional) for 2-3 minutes on a low/medium fire 2) add 1/2 cup water and peanut butter, reduce heat and mix 3) make the sauce a thick runny liquid by adding water 4) add the brown sugar, soy and fish sauce mix and taste(adjust as needed) 5) add chili(optional) and add the lemon juice(taste..adjust)….it’s ready!!
Obvously the spaghetti must be cooked and then cooled with water. Be careful not to let it sit in the water too long because the noodles will soak up the water and can get too soft.
Put the noodles in the serving bowl. Then, give a splash of soy sauce and a heavy splash of rice vinegar on the noodles. Then, some peanut sauce, then some cucumber, then a little more peanut sauce, then the black pepper, then more green onions on top.
Everybody, including locals, has loved this recipe. I’ve learned from trying many recipes over and over…the first time is always where you get a feeling for the dish, though it won’t be perfect….then after that, it’s yours!
